Thai Coconut Lime Chicken

  • 1 chopped onion
  • 1 clove of garlic
  • 1.5 tbsp of olive oil
  • 400 g chicken breast into cubes
  • 1 tbsp Soy sauce
  • 1 cup of Thai Coco coconut milk
  • 1 juice lime
  • 1 tbsp curry powder
  • 2 tbsp chopped fresh coriander
  • 2 tbsp chopped mint
  • 1 tbsp lemongrass
  • 1 tsp chopped ginger


  1. Sauté the onion and garlic in olive oil. Add the curry and Stir well.
  2. Add the chicken cubes and mix. Add the soy sauce. Let it cook for about 5 minutes.
  3. Then add the coconut milk. Let simmer for 10 minutes.
  4. Add the remaining ingredients (lemon, coriander, mint, lemongrass, ginger).
  5. Serve this curry with noodles or basmati rice.
