Ingredients
- 1 chopped onion
- 1 clove of garlic
- 1.5 tbsp of olive oil
- 400 g chicken breast into cubes
- 1 tbsp Soy sauce
- 1 cup of Thai Coco coconut milk
- 1 juice lime
- 1 tbsp curry powder
- 2 tbsp chopped fresh coriander
- 2 tbsp chopped mint
- 1 tbsp lemongrass
- 1 tsp chopped ginger
Directions
- Sauté the onion and garlic in olive oil. Add the curry and Stir well.
- Add the chicken cubes and mix. Add the soy sauce. Let it cook for about 5 minutes.
- Then add the coconut milk. Let simmer for 10 minutes.
